漫话“初五开市”
北京过大年，最少要过五天，由初一算起，到初五为止，才算过了年，俗名“破五”。
在这五天内，商店停市，戏馆子封箱不唱戏，各衙门封印不办公，统统要等到初六，最少初五才开市大吉。在这几天中，东四、西单、前门大街、大栅栏、廊房头条等繁华热闹的去处，大大小小的买卖，一律上着板，用大红纸、梅红纸写了贴在门上：“初五开市”。《燕京岁时记》云：“初五日谓之破五……新嫁女子，亦于是回归宁，……诸商亦渐次开张贸易矣。”把新嫁女子归宁和商店开市并列，写在一起，喜气洋洋。但是“几家欢乐几家愁”，就在这喜气洋洋的新年新月里，在商店渐次开张贸易的时刻，年年总有一些人要愁容满面的，这就是各商号中被辞退出店的伙友。在生意萧条的年月，这些人多些；在生意繁荣的年月，这些人少些，但多少总是有一些的。
旧式商业的会计年度是以农历计算的，人事变动也是按农历计算的。如果一家买卖年初五、初六开不出市来，那就等于告诉人们这家字号“关门大吉”了。腊月底各家字号把账结好，开出总清单送给东家。是赚啦，还是赔啦，赚多少，赔多少，大掌柜、二掌柜以及大小伙计，把钱分好，用红包送到各人手中，多少不等，人人有份。三十晚上吃敬神酒，初一给东家拜年，初二祭财神等等，这些都是欢乐的事，而最最紧张的是年初四或初五晚上开市之前那顿酒席了。这是一顿使人提心吊胆的“便宴”，这顿便宴行话叫“说官话”，俗名“吃滚蛋包子”。这顿晚宴，是比较丰盛的，有菜有酒，酒后吃饭时，照例是吃包子。上席时，东家、掌柜，大小伙及各就座位，小伙计依次把酒斟满，当家的举杯祝贺，然后吃上几口酒菜之后，便要开腔了。如果生意好，便当众宣布人事照旧，大家开怀畅饮；如果生意不好，要辞退人，按老年规矩，也十分注意礼貌。在席上当家的叹完“苦经”之后，等到包子端上来，便亲自夹一只包子放在某人碗中，此人便明白了，饭后自己就收拾行李带着辛酸和热泪告辞走了。“吃滚蛋包子”由此得名。
